I was searching around for an easy cookie recipe and came across this delicious one. I am obsessed with blueberries right now, so any recipe that includes them I am all for!!! It just so happened that I had all the ingredients to bake this one up right away!
1/2 cup butter, softened
1 cup packed brown sugar
1 tsp vanilla extract
1 1/2 cups quick-cooking oats
1 cup flour
1 to 2 tsp ground cinnamon
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1 cup fresh or frozen blueberries
- In a bowl, cream butter and brown sugar. Beat in egg and vanilla. Combine oats, flour, cinnamon, salt, baking soda and baking powder, gradually adding to the creamed mixture. Stir in the blueberries. (Works even better if you have your toddler help stir:)
- Drop tablespoons 2in. apart onto lightly greased baking sheets. Bake at 350 for 12-14 minutes or until golden brown. Remove to wire racks to cool. Yield: 3 dozen (Mine made a little over 2 dozen).
- I used old-fashioned oats instead of the quick oats that the recipe calls for, since that is what I happened to have on hand. My oven is a little hot so I ended up cooking them for about 10 minutes. They weren’t quite sweet enough for me, so next time I think I would add more sugar. Overall a tasty treat!!!
