Fried Plantains

Did anyone else wonder what in the world plantains were??  I saw them in the grocery store and just thought they looked like rotten bananas.  Since I’ve been on a kick of trying new things I decided to tackle these rotten banana look-alikes.  I found this yummy recipe


  • 2 ripe plantains(almost black) (If anyone knows what the trick to peeling a plantain is let me know!!  Definitely doesn’t peel as easy as a banana!!!)
  • 1-2 tsp  coconut oil
  • 1 tsp sugar
  • 1/2 tsp cinnamon


  • Slice the plantains into 1/4cm slices.
  • Heat the coconut oil to medium, add plantains and cook until gently browned.


  • Add the sugar and cinnamon mix near the end of the cooking so that it incorporates in, but not so long that the sugar burns.

Looks yummy right!?!?
