Did anyone else wonder what in the world plantains were?? I saw them in the grocery store and just thought they looked like rotten bananas. Since I’ve been on a kick of trying new things I decided to tackle these rotten banana look-alikes. I found this yummy recipe
- 2 ripe plantains(almost black) (If anyone knows what the trick to peeling a plantain is let me know!! Definitely doesn’t peel as easy as a banana!!!)
- 1-2 tsp coconut oil
- 1 tsp sugar
- 1/2 tsp cinnamon
- Slice the plantains into 1/4cm slices.
- Heat the coconut oil to medium, add plantains and cook until gently browned.
- Add the sugar and cinnamon mix near the end of the cooking so that it incorporates in, but not so long that the sugar burns.
