I’ve been slowly getting rid of all the packaged items in my pantry and have been trying to replace them with healthier alternatives. First up is this easy to make pancake mix.
The following recipe makes about a dozen pancakes, so you’ll want to repeat the dry ingredients until you fill your container. I did it about 6 times for mine. Make sure you leave enough room to be able to shake it around.
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 Tablespoon white sugar
- 2 Tablespoons ground flax seed
I found this cute container at Target and used my label maker for the labels. I listed the wet ingredients on the back to make it easy for myself each time.
Add 1 1/2 “heaping” cups of the mix with the following wet ingredients:
- 2 cups milk
- 1 egg
- 3 Tablespoons butter, melted( I used coconut oil and they turned out great)
- shot of vanilla extract
This mixture is runnier than the normal bisquick and the pancakes turn out thinner, but don’t be afraid….they are seriously delicious!!
I like to make an extra batch and freeze them to use for an easy breakfast for my daughter.
