Quinoa Marsala Burgers

This is an easy and delicious meatless recipe.  They surprisingly have a lot of flavor!!

Ingredients:

  • 1/2 cup quinoa (cooked to package directions)
  • 1 baked sweet potato with skin removed
  • 1 egg, beaten
  • cilantro(A few springs, diced)
  • 1 small onion, diced
  • Ginger(2 in. piece diced)
  • 1 garlic clover, minced
  • 1/2 tsp sea salt
  • 1/2 tsp garam marsala( This is basically an Indian spice mix which I didn’t have, so I made my own with the spices I had in my cabinet)
  • 1/2 tsp curry powder
  • 1/4 tsp mustard seed
  • 1/8 tsp cayenne pepper
  • coconut oil for brushing

**I’ll be honest I didn’t measure any of these spices and I eliminated ones I didn’t have.  I just did a sprinkle here and a sprinkle there type thing:)

Directions:

  • Preheat oven to 400 degrees
  • Combine all ingredients and mix in a large bowl
  • Form mixture into 8 patties
  • Place patties on a baking sheet with parchment paper

  • Brush tops of burgers with small amount of coconut oil
  • Bake 15 min, then flip burgers and brush with coconut oil again
  • Bake for another 15 min or until golden brown
